Choc Chip Cookie Dough Protein Brownies

Warning: These brownies will have you hooked after one bite. They are seriously delicious and healthy too! Can't choose between cookie dough or chocolate? This recipe has it all - and you won't believe how easy they are to make. 

 

Ingredients  

Cookie Dough Layer:

- 1 Can (400g approx) Chickpeas, rinsed and drained

- 1 Scoop Pro Supps Whey Protein Vanilla

- 1/3 Cup Natural Peanut Butter 

- 2 Eggs

- 1/3 Cup Sugar Free Maple Syrup 

- 2 Tablespoons Vanilla Extract 

- 2 Teaspoons Natural Sweetener 

- 1/2 Teaspoon Salt 

- 1/4 Teaspoon Baking Powder

- 1/2 Double Chocolate Chunk Quest Bar, roughly chopped

Brownie Layer:

- 1 Can (400g) Black Beans, rinsed and drained

- 1 Scoop Pro Supps Whey Protein Chocolate

- 2 Eggs

- 1/3 Cup Unsweetened Apple Sauce

- 1/3 Cup Coconut Oil 

- 3-4 Tablespoons Raw Cacao Powder (or Cacao Powder)

- 2 Teaspoons Instant Coffee (dry mix)

- 2 Teaspoons Vanilla Extract 

- 1/3 Cup Natural Sweetener 

- 1/2 Teaspoon Salt 

- 1/4 Teaspoon Baking Powder 


Directions

1. Preheat the oven to 175C and line an 8x8 inch baking tin with baking paper. Mix all of the brownie ingredients in the food processor until the batter is smooth and spread batter evenly over the baking tin. 

 

2. Mix all of the cookie dough layer ingredients in the food processor until smooth (excluding the Quest Bar) and then fold in the Quest Bar. 

 

3. Spread the cookie dough layer over the brownie batter. Bake for 25-30 minutes. Remove and cool. 

Makes 16.
