Sweet, soft, delicious and comforting!
Apple Cinnamon Scrolls are a heavenly treat, a homemade pastry that melts in your your mouth.
Ingredients:
PASTRY
- 3 cups Organic Plain Flour
- 2-3 tbsp. Raw Protein Paleo Fermented Vanilla Lucuma
- 9g sachet Organic Dried Yeast
- 1/2 cup Coconut Sugar
- 120g Organic Butter, melted
- 1 Egg, whisked
- 200ml Oat Milk, slightly warmed
- 1 tsp Vanilla Essence
APPLE MIX
- 4 Apples, cut into small pieces
- 100 grams Butter
- 1/2 cup Coconut Sugar
- 1/4 tsp Cinnamon
- 1/4 tsp. Ground Ginger
- 1/3 cup Water
- 1/2 cup Walnuts, optional
Directions:
- Combine flour, protein, yeast, and sugar in a bowl, mix well.
- In a separate bowl, combine butter, oat milk, egg, and vanilla, whisk together.
- Make a well in dry mix and gradually add the wet mixture, stirring until it forms a dough-like texture.
- Knead for a few minutes and place in a large bowl. Cover with a damp tea towel and leave for approximately 1 hour. The dough will increase in size (it should almost double).
- Meanwhile, prepare the apple mix. Combine all ingredients in a heavy based pan and cook over a low heat for approximately 10 minutes, or until apples are soft.
- Set aside until cooled.
- Place dough between to sheets of baking paper and roll into a rectangular shape (approx. 1/2 cm thick).
- Remove top baking sheet and generously spread with apple mix. Gently roll (lengthwise),discarding paper underneath.
- Using a sharp knife, cut into approximately 14 pieces.
- Arrange in a greased and lined oven proof dish, leaving space between (approx. 1cm). Cover and set aside for approximately 45 minutes.
- Preheat oven to 180 degrees C.
- Bake scrolls for 30 minutes, or until golden.
- Cover and set aside for a further 10 minutes to cool slightly.
- Top with walnuts and icing sugar glaze (optional). Enjoy!
