Apple Cinnamon Scrolls

Sweet, soft, delicious and comforting!

Apple Cinnamon Scrolls are a heavenly treat, a homemade pastry that melts in your your mouth. 




  • 3 cups Organic Plain Flour
  • 2-3 tbsp. Raw Protein Paleo Fermented Vanilla Lucuma
  • 9g sachet Organic Dried Yeast
  • 1/2 cup Coconut Sugar
  • 120g Organic Butter, melted
  • 1 Egg, whisked
  • 200ml Oat Milk, slightly warmed
  • 1 tsp Vanilla Essence



  • 4 Apples, cut into small pieces
  • 100 grams Butter
  • 1/2 cup Coconut Sugar
  • 1/4 tsp Cinnamon
  • 1/4 tsp. Ground Ginger
  • 1/3 cup Water
  • 1/2 cup Walnuts, optional



  1. Combine flour, protein, yeast, and sugar in a bowl, mix well. 
  2. In a separate bowl, combine butter, oat milk, egg, and vanilla, whisk together. 
  3. Make a well in dry mix and gradually add the wet mixture, stirring until it forms a dough-like texture. 
  4. Knead for a few minutes and place in a large bowl. Cover with a damp tea towel and leave for approximately 1 hour. The dough will increase in size (it should almost double). 
  5. Meanwhile, prepare the apple mix. Combine all ingredients in a heavy based pan and cook over a low heat for approximately 10 minutes, or until apples are soft. 
  6. Set aside until cooled. 
  7. Place dough between to sheets of baking paper and roll into a rectangular shape (approx. 1/2 cm thick). 
  8. Remove top baking sheet and generously spread with apple mix. Gently roll (lengthwise),discarding paper underneath. 
  9. Using a sharp knife, cut into approximately 14 pieces. 
  10. Arrange in a greased and lined oven proof dish, leaving space between (approx. 1cm). Cover and set aside for approximately 45 minutes. 
  11. Preheat oven to 180 degrees C. 
  12. Bake scrolls for 30 minutes, or until golden. 
  13. Cover and set aside for a further 10 minutes to cool slightly. 
  14. Top with walnuts and icing sugar glaze (optional). ​ ​Enjoy!
