There's always something to celebrate about.
If it's your birthday or you just feel like celebrating little milestones, you can try this High Protein Funfetti Cake.
Ingredients:
For the Cake:
- 2 scoops Optimum Nutrition Gold Standard 100% Whey, Vanilla Ice Cream
- 55g Oat Flour (rolled oats blended into flour)
- 1 tsp. Baking Powder
- 1/4 tsp. Baking Soda
- 3 tbsp. Powdered Sweetener (Stevia)
- Pinch of Sea Salt
- 1 tsp. Vanilla Extract
- 155g Egg Whites
For the Icing:
- 200g Plain Greek Yogurt
- 15g Stevia Powder
- 1 tsp. Vanilla Extract
- 35g Rainbow Sprinkles
Directions:
- Preheat oven to 180 degrees.
- In a medium bowl, add protein powder, oat flour, baking powder, baking soda, stevia powder, and sea salt. Mix until combined.
- Beat liquid egg whites until light and fluffy, add to flour mixture along with vanilla extract. Fold well.
- Pour batter into a non-stick round cake tin and bake in the oven for 12-18 minutes or until the cake is lightly golden brown and when a skewer is inserted it comes out clean.
- Allow the cake to cool.
- While cake is cooling, make your Greek yogurt frosting. Whip together the yogurt, stevia powder and vanilla extract until a thick, glossy and creamy mixture is formed (don't over-mix).
- Add frosting to the entire outside of your cake using a spatula and top with rainbow sprinkles. ENJOY!
