High Protein Funfetti Cake

There's always something to celebrate about.

If it's your birthday or you just feel like celebrating little milestones, you can try this High Protein Funfetti Cake.

 

Ingredients: 

For the Cake:

 

For the Icing: 

  • 200g Plain Greek Yogurt
  • 15g Stevia Powder
  • 1 tsp. Vanilla Extract
  • 35g Rainbow Sprinkles

 

Directions:

  1. Preheat oven to 180 degrees.
  2. In a medium bowl, add protein powder, oat flour, baking powder, baking soda, stevia powder, and sea salt. Mix until combined.
  3. Beat liquid egg whites until light and fluffy, add to flour mixture along with vanilla extract. Fold well.
  4. Pour batter into a non-stick round cake tin and bake in the oven for 12-18 minutes or until the cake is lightly golden brown and when a skewer is inserted it comes out clean.
  5. Allow the cake to cool.
  6. While cake is cooling, make your Greek yogurt frosting. Whip together the yogurt, stevia powder and vanilla extract until a thick, glossy and creamy mixture is formed (don't over-mix).
  7. Add frosting to the entire outside of your cake using a spatula and top with rainbow sprinkles. ENJOY!
