Nuzest Lemon Blueberry Muffins

Muffins are delicious, but are not always healthy. But you can make them healthy and guilt-free.

Thanks to his Lemon Blueberry Muffins recipe from Nuzest NZ. 

Not only are these muffins loaded with protein, but these are also keto-friendly and gluten-free.

Made using Clean Lean Protein - Just Natural. 



  • 2 cups Almond flour
  • 1 serving Nuzest Clean Lean Protein Just Natural
  • 2 tsp. Baking powder
  • 4 Eggs
  • 60 g Coconut oil, melted
  • 1/2 cup Xylitol
  • 2 tbsp. preserved Lemon (just the rind, rinsed)
  • Juice of 2 lemons
  • 30 ml Milk of choice
  • 1/2 cup Blueberries


Syrup Topping:

  • Juice of 2 lemons
  • 2 tbsp. Xylitol 



  1. Whisk the eggs, coconut oil, and xylitol together.
  2. Combine the almond flour, Clean Lean Protein, and baking powder and add to the egg mixture. Add the preserved lemon, lemon juice, and milk and mix well. Lastly, add the blueberries and fold gently.
  3. Pour into greased muffin tray and bake at 180°C (170°C Fan Bake) for 20 minutes.
  4. Place the juice of 2 lemons and xylitol in a pot. Bring to a simmer and reduce slightly. 
  5. Once the muffins are baked, remove from the oven and drizzle the syrup topping over each muffin and allow to cool. Enjoy!
