Red Velvet, Chocolate and Strawberries, Oh My!

Come on, let's be honest. Is that not a seriously decadent combination?

This protein powder cake recipe uses Cellucor's COR Performance Whey Protein - the red velvet flavor, obviously - to pack this cake with muscle-building power. Enjoy!

Cake Ingredients

  • 1/2 cup plain, non-fat Greek yogurt
  • 2 large egg whites
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 1.5 tablespoons melted coconut oil
  • 1.5 scoops Red Velvet Cake COR Performance Whey Protein
  • 1 cup granulated stevia
  • 1/2 cup oat flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup dark chocolate chips
  • 2 large strawberries, diced

Icing Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup agave or honey
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons unsweetened almond milk

  1. Start by combining the egg whites, Greek yogurt, almond milk, and vanilla extract in a bowl. Mix it all up until the consistency is smooth.
  2. Grab the coconut oil and microwave it for 30 to 45 seconds until it's nice and melted. Add it to your bowl and stir it in immediately.
  3. Now, grab another bowl. Add the Cellucor COR Performance Whey Protein, oat flour, baking agents, stevia, and cocoa powder.
  4. Pour the wet bowl (the first one) into the dry bowl (the second one) and mix well.
  5. Set your oven to 177 degrees C and coat your favorite baking dish with non-stick spray or oil.
  6. Spread a layer of batter along the bottom of the dish, then sprinkle the chocolate chips on top.
  7. Next, toss the strawberries over the chocolate chips, then spread the rest of the batter on top.
  8. Toss it into the oven and let it bake for 25 to 30 minutes. While it's baking, make your icing and set it aside.
  9. When the time is up, pull your cake out of the oven and let it cool. Spread the icing on top and you're done! Feel free to top with sprinkles or more sliced strawberries.
