Can't believe it is almost a year since I had baby Summer.
We are off to our toddler group tomorrow and we have to bring a cupcake for them to smash/eat with their little buddies.
Summer hasn't had junk food in her diet and I thought if I'm going to make a batch of muffins I my as well make ones she can eat during the week.
I won't be a grincho mum and once in awhile she can have some treat food but if I can make something that is nutritious and yummy then why not?
These have no gluten or sugar other than natural sugar from the banana
I think you could add chopped nuts or some LSA and that would be tasty too.
So I was pleased my attempt turned out ok, so if you have little ones you need to bake for (or big ones) this Christmas then here you go :))
Summer's First Birthday Muffin
Ingredients
4 to 5 ripe bananas (I used frozen as I had some left over)
1 tsp baking soda
1 tsp baking powder
1 3/4 cups rice flour (you could use coconut or whole grain you might just need to vary levels a bit)
1 egg
3 tbsp melted organic butter - next time I will try using Good Health coconut oil
I just blended it all together and poured it into muffin tins. I baked for about 15-20 minutes on 180C until fork came out clean.
The icing I'm going to attempt tomorrow I saw online on a paleo site.
You take coconut cream in the fridge overnight then remove the cream bit in a bowl and whip until creamy.  Yeah icing without the sugar.
If you wanted to have protein with your muffin then chug down a protein shake with it or replace some of the flour with protein powder. I've done this before it will make it a bit dry but you could throw in an extra egg or a couple egg whites or a bit more banana.
