  1. ​Beat egg whites for 2 minutes until they form soft peaks.
  2. In a new bowl, mix egg yolks along with the remaining ingredients until smooth.
  3. Gradually combine the egg white mixture into banana mixture.
  4. Scoop 1/4 of mixture onto skillet and cook for 60-90 seconds on each side over low heat.
  5. Optional: Top with fresh fruit or add dark chocolate chips into mixture.
