Cooking with Kimmi – Birthday Cake Protein Ice Cream

It looks like a birthday treat, but the ingredients are surprisingly simple. No oven, no cooking and no complicated prep.

Ingredients – 2 serves

  • 250g Greek yoghurt
  • 150g cottage cheese
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • 1–2 tbsp maplesyrup or honey
  • 2 tbsp milk, as needed
  • 1 tbsp rainbow sprinkles
  • Extra sprinkles for topping

Method

  1. Add the Greek yoghurt, cottage cheese, protein powder, vanilla and maple syrup to a blender.
  2. Blend until completely smooth and creamy.
  3. Add a little milk if needed to get everything moving.
  4. Stir through the rainbow sprinkles.
  5. Pour into a shallow container and freeze for around 2–3 hours, stirring once or twice while it freezes.
  6. Let it sit for 5–10 minutes before scooping.
  7. Finish with plenty of sprinkles.

Protein: roughly 25–30g per serve, depending on the protein powder and yoghurt used.
