Mini fluffy protein pancakes stacked with strawberries, banana and yoghurt, then finished with rainbow sprinkles. They look fun enough for a birthday but still work as a high-protein breakfast or snack.
Ingredients – 2–3 serves
Pancakes
- 1 scoop vanilla protein powder
- ½ cup rolled oats, blended into flour
- 1 egg
- ½ banana
- ¼ cup Greek yoghurt
- ¼ tsp baking powder
- ¼ tsp vanilla extract
- 2–3 tbsp milk, as needed
To serve
- Greek yoghurt
- Strawberries
- Banana
- Rainbow sprinkles
- A little honey or maplesyrup
Method
- Blend the oats into a fine flour.
- Add the protein powder, egg, banana, yoghurt, baking powder and vanilla.
- Blend until smooth, adding a little milk if the mixture is too thick.
- Cook small teaspoon-sized pancakes in a lightly greased non-stick pan over medium-low heat.
- Let them cool slightly.
- Thread the mini pancakes onto small skewers, alternating with strawberries and banana.
- Add a little Greek yoghurt over the top and finish with rainbow sprinkles.
Why this one works
It's basically birthday cake meets pancake stack, but with a decent protein hit. And because they're mini, they feel much more like a fun treat than a standard breakfast.
