Cooking with Kimmi – Crispy Chicken Protein Rice Paper Rolls

Fresh, crunchy and packed with protein, with a creamy peanut-lime dipping sauce. They feel more like something you'd order at a good café than a typical “protein recipe”.

Makes 6–8 rolls

Rolls

  • 200g cooked chicken breast, shredded
  • 6–8 rice paper sheets
  • ½ cucumber, cut into thin sticks
  • 1 carrot, cut into thin sticks
  • ½ red capsicum, thinly sliced
  • 1 cup shredded lettuce
  • Fresh coriander or mint
  • 2 tbsp crushed peanuts

Creamy Protein Dipping Sauce

  • 100g Greek yoghurt
  • 1 tbsp peanut butter
  • 1 tsp soy sauce
  • Juice of ½ lime
  • ½ tsp honey
  • Small splash of water to loosen

Method

  1. Mix all the dipping sauce ingredients until smooth.
  2. Dip one rice paper sheet into warm water for a few seconds, then lay it flat.
  3. Add chicken, cucumber, carrot, capsicum, lettuce and herbs.
  4. Sprinkle over a little crushed peanut.
  5. Fold in the sides and roll tightly.
  6. Repeat with the remaining rice paper sheets.
  7. Serve whole or cut in half with the dipping sauce.

Protein: roughly 25–30g per serving, depending on how many rolls you make.
