Cooking with Kimmi – Cottage Cheese & Spinach Protein Fritters

These golden fritters are crispy on the outside, soft in the middle, and packed with protein. They're great warm or cold and perfect for meal prep.

Ingredients (Makes 8 fritters)

  • 200g cottage cheese
  • 2 eggs
  • 1 scoop unflavoured Zealea Unflavoured Whey 
  • 1 cup baby spinach, finely chopped
  • ½ cup grated tasty cheese
  • ¼ cup oat flour (or plain flour)
  • 1 tsp garlic powder
  • Salt and cracked black pepper
  • Olive oil spray

Method

  1. Combine cottage cheese, eggs and protein powder in a large bowl.
  2. Stir through spinach, grated cheese, oat flour, garlic powder, salt and pepper.
  3. Mix until a thick batter forms.
  4. Heat a non-stick frying pan over medium heat and lightly spray with olive oil.
  5. Spoon the mixture into the pan and flatten slightly.
  6. Cook for 3–4 minutes per side until golden brown and cooked through.
  7. Serve warm or refrigerate for meal prep.
