Cooking with Kimmi – High-Protein Chicken & Corn Filo Parcels

These crispy filo parcels are packed with lean chicken, sweet corn, and a creamy high-protein filling. They make a great lunch, snack, or light dinner

Ingredients (Makes 6 parcels)

  • 6 sheets filo pastry
  • 250g cooked chicken breast, shredded
  • 1 scoop unflavoured Zealea Unflavoured Whey 
  • ½ cup Greek yogurt
  • ½ cup sweet corn kernels
  • ¼ cup grated mozzarella
  • 2 spring onions, finely sliced
  • 1 tsp Dijon mustard
  • Salt and cracked black pepper
  • Olive oil spray

Method

  1. Preheat oven to 190°C.
  2. Mix together the chicken, protein powder, Greek yogurt, corn, mozzarella, spring onion, mustard, salt, and pepper.
  3. Lay out one sheet of filo pastry and lightly spray with olive oil.
  4. Fold the pastry in half and place a spoonful of filling near one corner.
  5. Fold into a triangle parcel, continuing until all the pastry is wrapped.
  6. Place on a lined baking tray and lightly spray the tops.
  7. Bake for 20–25 minutes until crisp and golden.
