These crispy filo parcels are packed with lean chicken, sweet corn, and a creamy high-protein filling. They make a great lunch, snack, or light dinner
Ingredients (Makes 6 parcels)
- 6 sheets filo pastry
- 250g cooked chicken breast, shredded
- 1 scoop unflavoured Zealea Unflavoured Whey
- ½ cup Greek yogurt
- ½ cup sweet corn kernels
- ¼ cup grated mozzarella
- 2 spring onions, finely sliced
- 1 tsp Dijon mustard
- Salt and cracked black pepper
- Olive oil spray
Method
- Preheat oven to 190°C.
- Mix together the chicken, protein powder, Greek yogurt, corn, mozzarella, spring onion, mustard, salt, and pepper.
- Lay out one sheet of filo pastry and lightly spray with olive oil.
- Fold the pastry in half and place a spoonful of filling near one corner.
- Fold into a triangle parcel, continuing until all the pastry is wrapped.
- Place on a lined baking tray and lightly spray the tops.
- Bake for 20–25 minutes until crisp and golden.
