Cooking with Kimmi – Protein Chicken Quesadilla

Golden, crispy tortillas filled with seasoned chicken, melted cheese, and a boost of protein. Ready in around 15 minutes and perfect for lunch or dinner.

Ingredients (Makes 2 quesadillas)

  • 2 wholegrain tortillas
  • 1 scoop unflavoured protein
  • 200g cooked chicken breast, shredded
  • ½ cup grated mozzarella cheese
  • ¼ cup Greek yogurt
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper
  • Cooking spray or 1 tsp olive oil

Optional Serving

  • Salsa
  • Sliced avocado
  • Greek yogurt instead of sour cream

Method

  1. In a bowl, combine the shredded chicken, Greek yogurt, protein powder, paprika, garlic powder, salt, and pepper.
  2. Spread the mixture over one half of each tortilla.
  3. Sprinkle with grated mozzarella.
  4. Fold the tortillas in half.
  5. Heat a non-stick frying pan over medium heat.
  6. Cook each quesadilla for 3–4 minutes per side until golden and crispy and the cheese has melted.
  7. Slice into wedges and serve warm.

  • Great for lunch or dinner
