Ingredients (Makes 2 quesadillas)
- 2 wholegrain tortillas
- 1 scoop unflavoured protein
- 200g cooked chicken breast, shredded
- ½ cup grated mozzarella cheese
- ¼ cup Greek yogurt
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper
- Cooking spray or 1 tsp olive oil
Optional Serving
- Salsa
- Sliced avocado
- Greek yogurt instead of sour cream
Method
- In a bowl, combine the shredded chicken, Greek yogurt, protein powder, paprika, garlic powder, salt, and pepper.
- Spread the mixture over one half of each tortilla.
- Sprinkle with grated mozzarella.
- Fold the tortillas in half.
- Heat a non-stick frying pan over medium heat.
- Cook each quesadilla for 3–4 minutes per side until golden and crispy and the cheese has melted.
- Slice into wedges and serve warm.
