Cooking with Kimmi – Sweet Chilli Protein Meatballs

These juicy chicken meatballs are coated in a light sweet chilli glaze and make a great dinner or meal-prep lunch. They pair well with rice, vegetables, or a fresh salad.

Ingredients (Makes 12 meatballs)

Meatballs

Sauce

  • 2 tbsp sweet chilli sauce
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp lime juice

Method

  1. Preheat oven to 190°C.
  2. Combine all meatball ingredients until well mixed.
  3. Roll into 12 even-sized meatballs.
  4. Place on a lined baking tray.
  5. Bake for 18–20 minutes until cooked through.
  6. While baking, mix together the sweet chilli sauce, soy sauce, honey, and lime juice.
  7. Toss the cooked meatballs gently in the sauce before serving.
