Cooking with Kimmi – High-Protein Creamy Chicken & Broccoli Pasta Bake

This is creamy, cheesy, filling and perfect for a family dinner or meal prep.

Ingredients – Makes 4 serves

  • 300g high-protein pasta or wholemeal pasta
  • 400g chicken breast, diced
  • 1½ cups broccoli, cut into small chunks
  • 1 cup cottage cheese
  • ½ cup Greek yoghurt
  • ½ cup grated mozzarella
  • ¼ cup grated parmesan
  • 2 cloves garlic, crushed
  • ½ tsp onion powder
  • Salt and cracked black pepper

Method

  1. Preheat the oven to 190°C.
  2. Cook the pasta according to the packet instructions, adding the broccoli for the final 2–3 minutes.
  3. While the pasta cooks, pan-cook the chicken until golden and cooked through.
  4. In a bowl, blend or mix together the cottage cheese, Greek yoghurt, garlic, onion powder, salt and pepper to make the creamy sauce.
  5. Combine the pasta, broccoli, chicken and sauce in a large baking dish.
  6. Sprinkle mozzarella and parmesan over the top.
  7. Bake for 15–20 minutes until golden and bubbling.
