These are light, fruity and super easy to make. The OxyShred adds the flavour, while Greek yoghurt and protein powder turn it into a more substantial snack.
Ingredients – Makes 4 cups
- 1 scoop OxyShred, in a flavour that works with berries
- 2 cups cold water
- 2 tsp powdered gelatine
- ½ cup Greek yoghurt
- 1 scoop vanilla protein powder
- 1 cup mixed berries
- 1 tsp honey, optional
- Fresh berries for the top
Method
- Add ½ cup of the water to a small bowl and sprinkle over the gelatine. Leave for 2–3 minutes to bloom.
- Warm the remaining 1½ cups of water gently and stir in the bloomed gelatine until completely dissolved. Don't boil it.
- Allow the mixture to cool slightly, then stir in the OxyShred.
- Pour into four small glasses and refrigerate for around 2–3 hours until set.
- Mix the Greek yoghurt with the protein powder and honey if using.
- Once the jelly has set, add a layer of the protein yoghurt on top.
- Finish with a few fresh berries and refrigerate until ready to serve.

- Around 12–15g protein per serve
- Light and refreshing
- Moderate carbohydrates
- Low to moderate fat
