This one is packed with flavour, high in protein and feels like something you would order from a café or takeaway spot.
Tender beef, rice, edamame and a sticky teriyaki-style sauce make it a great lunch or easy weeknight dinner.
Ingredients – Makes 2 Serves
- 300g lean beef strips
- 1 cup cooked jasmine or brown rice
- 1 cup shelled edamame
- 1 small carrot, finely sliced
- 1 tablespoon soy sauce
- 1 tablespoon teriyaki sauce
- 1 teaspoon honey
- 1 clove garlic, crushed
- 1 teaspoon grated ginger
- 1 teaspoon sesame oil or olive oil
- Salt and cracked black pepper
Method
- Cook the rice according to the packet instructions if not already prepared. I love it in the rice cooker comes out perfect every time, 1 cup rice, two cups water
- Heat the oil in a frying pan over medium-high heat.
- Add the beef strips and cook for a few minutes until browned and cooked to your liking.
- Add the garlic and ginger and cook for another 30 seconds.
- Stir through the soy sauce, teriyaki sauce and honey.
- Add the edamame and cook for a further 2–3 minutes until heated through.
- Divide the rice between two bowls.
- Top with the teriyaki beef, edamame and sliced carrot.
- Spoon any remaining sauce from the pan over the top and serve.
