These colourful stuffed capsicums are packed with lean protein, vegetables and topped with bubbling golden cheese.
They're perfect for meal prep and look fantastic on the plate.
Ingredients (Makes 4 serves)
- 4 large red capsicums
- 400g lean chicken mince
- 1 scoop unflavoured Zealea Unflavoured Protein
- 1 cup cooked brown rice
- ½ cup baby spinach, chopped
- ½ cup diced tomatoes
- ½ onion, finely diced
- 2 cloves garlic, crushed
- ½ cup grated mozzarella
- 1 tsp smoked paprika
- 1 tsp Italian herbs
- Salt and cracked black pepper
Method
- Preheat the oven to 190°C.
- Slice the tops off the capsicums and remove the seeds.
- Cook the onion and garlic until softened, then add the chicken mince.
- Stir through the tomatoes, spinach, rice, smoked paprika and herbs.
- Remove from the heat and mix in the protein powder until evenly combined.
- Spoon the filling into the capsicums.
- Sprinkle with mozzarella.
- Bake for 25–30 minutes until the capsicums are tender and the cheese is golden.
