Cooking with Kimmi - Peppermint Hot Chocolate Protein Fudge Bites

No-bake, minty, chocolatey, and perfect for holiday snacking.

Ingredients (makes 8–10 bites)

  • 1 scoop chocolate protein powder

  • 2 tbsp cocoa powder

  • ¼ cup almond butter (or peanut butter)

  • 2–3 tbsp maple syrup

  • 1 tbsp coconut oil

  • 1–2 tbsp milk of choice, as needed

  • ½ tsp peppermint extract

  • Optional festive extras:

    • Crushed candy cane

    • Mini dark chocolate chips


Instructions

  1. In a bowl, mix protein powder and cocoa powder.

  2. Add almond butter, maple syrup, melted coconut oil, and peppermint extract.

  3. Stir until it forms a thick dough. Add milk one tablespoon at a time if it’s too dry.

  4. Roll into small fudge balls (or press into a small container and slice).

  5. Top with a sprinkle of crushed candy cane or mini chocolate chips if you want extra Christmas magic.

  6. Refrigerate for 30–45 minutes to firm up.
