Ingredients
Base

1 cup oats

2 tbsp coconut oil

1 tbsp honey or sugar-free maple syrup

2 tbsp almond milk
Filling

200g light cream cheese (room temp)

½ cup Greek yoghurt

Juice + zest of 1 lemon

2–3 serves of this sweetener (to taste)

1 tsp vanilla extract
Instructions
Prep time: 10 minutes
Set time: 1–2 hours (fridge)
Servings: 6–8 bars

Make the base:
Blend oats into a rough flour. Mix with melted coconut oil, honey, and almond milk until it forms a sticky crumble. -
Press into a small dish:
Line a loaf tin or small container with baking paper and press the mixture firmly to create the base. -
Make the filling:
In a bowl, beat cream cheese until smooth. Add Greek yoghurt, protein powder, lemon juice, zest, sweetener, and vanilla. Mix until thick and creamy. -
Assemble:
Spread the filling evenly over the base. -
Chill:
Refrigerate for 1–2 hours until set. -
Slice and enjoy!
