Ingredients

Base

  • 1 cup oats

  • 2 tbsp coconut oil

  • 1 tbsp honey or sugar-free maple syrup

  • 2 tbsp almond milk

Filling


Instructions

Prep time: 10 minutes
Set time: 1–2 hours (fridge)
Servings: 6–8 bars

  1. Make the base:
    Blend oats into a rough flour. Mix with melted coconut oil, honey, and almond milk until it forms a sticky crumble.

  2. Press into a small dish:
    Line a loaf tin or small container with baking paper and press the mixture firmly to create the base.

  3. Make the filling:
    In a bowl, beat cream cheese until smooth. Add Greek yoghurt, protein powder, lemon juice, zest, sweetener, and vanilla. Mix until thick and creamy.

  4. Assemble:
    Spread the filling evenly over the base.

  5. Chill:
    Refrigerate for 1–2 hours until set.

  6. Slice and enjoy!
    Store in the fridge for up to 4 days.
