Cooking with Kimmi – Protein Pizza Scrolls

These are soft, cheesy, high-protein pizza scrolls that are perfect for lunchboxes, meal prep, or a quick snack.

They're a crowd-pleaser and a nice change from sweet protein recipes.


Ingredients (Makes 8–10 scrolls)

Dough

Filling

  • 2 tbsp tomato paste
  • ½ cup lean ham or chicken, diced
  • ½ cup grated mozzarella cheese
  • 1 tsp Italian herbs

Method

  1. Preheat oven to 180°C.
  2. Mix flour, whey protein, and Greek yogurt until a dough forms.
  3. Roll dough into a rectangle on a lightly floured surface.
  4. Spread tomato paste evenly across the dough.
  5. Sprinkle over chicken or ham, cheese, and herbs.
  6. Roll tightly into a log.
  7. Slice into 8–10 scrolls.
  8. Place on a lined baking tray.
  9. Bake for 15–18 minutes until golden.
