Cooking with Kimmi - Gains-Loaded Mexican Beef & Rice Skillet

Gains-Loaded Mexican Beef & Rice Skillet 

One-pan comfort with serious macros

Ingredients

  • 500g lean beef mince

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp chili flakes (optional)

  • 1 cup uncooked basmati or jasmine rice

  • 2 cups beef stock

  • 1 can (400g) black beans, drained and rinsed

  • 1 cup frozen corn

  • 1 cup grated cheddar cheese

  • 1 scoop unflavoured collagen or unflavoured protein (optional for extra gains)

  • Salt and pepper to taste

  • Fresh coriander and lime wedges to serve

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until soft.

  2. Add beef mince, cumin, paprika, chili flakes, salt, and pepper. Cook until browned.

  3. Stir in the rice, stock, black beans, and corn. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.

  4. Stir in grated cheese and optional protein powder until melted and smooth.

  5. Serve hot, topped with fresh coriander and a squeeze of lime.
