Cooking with Kimmi - Next Level Protein Choc Chip Skillet Cookie

Next Level Protein Choc Chip Skillet Cookie

A warm, gooey, high-protein cookie you can smash straight from the pan.

Perfect for dessert… or breakfast. No judgment.

Why You’ll Love It

  • High in protein, low in regret

  • One bowl, one skillet, zero fuss, I have a teeny tiny skillet so works perfect

  • Crispy edges, soft centre — the dream

  • Ready in under 15 minutes

Ingredients

  • 1 scoop vanilla Beyond Yourself Isolate

  • ¼ cup almond flour

  • 2 tbsp oats

  • 1 tbsp Greek yogurt

  • 1 egg white

  • 1 tsp vanilla essence

  • 1 tbsp maple syrup or sweetener of choice, you can use steviathis but only a very small amount

  • Pinch of salt

  • 1 tbsp dark choc chips

  • 1–2 tbsp water if needed for texture

Instructions

Prep time: 5 mins | Cook time: 10 mins | Serves: 1 (or 2 if you're feeling generous… unlikely)

  1. Preheat the oven to 175°C.

  2. Mix it up: In a bowl, combine protein powder, almond flour, oats, Greek yogurt, egg white, vanilla, sweetener, and salt. Stir until a cookie-dough-like batter forms. Add a splash of water if it’s too thick.

  3. Add the chips: Fold in the choc chips.

  4. Skillet time: Lightly grease a small oven-safe skillet or pan. Spread the dough evenly.

  5. Bake: 8–10 minutes until the edges are golden but the centre is still soft and gooey.

  6. Serve: Dig in warm, straight from the skillet. Next level unlocked.
