Cooking with Kimmi - Boxing Day Protein Trifle Cups

Perfect for Boxing Day when you want something sweet… but not another chicken roast dinner.

Ingredients (makes 2–3 cups)

  • 1 scoop vanilla protein powder

  • ¾ cup Greek yoghurt

  • 1–2 tbsp milk of choice (to thin)

  • ½ tsp vanilla extract

  • 1 cup fresh berries (strawberries, blueberries, raspberries)

  • 2–3 protein cookies, sponge fingers, or leftover Christmas cake (optional but great)

  • Optional extras:

    • White chocolate shavings

    • Berry compote

    • A drizzle of honey


How to Make It

  1. In a bowl, mix Greek yoghurt, protein powder, milk, and vanilla until smooth and creamy.

  2. In small glasses or jars, layer:

    • Crushed cookie or sponge

    • Protein yoghurt

    • Fresh berries

  3. Repeat layers until the cup is full.

  4. Finish with berries and a sprinkle of white chocolate if you’re feeling festive.

  5. Chill for 10–15 minutes or enjoy straight away.
