Cooking with Kimmi - White Chocolate Cranberry Protein Cookies

Soft, chewy, festive, and perfect with a cup of coffee.

Ingredients (makes 8–10 cookies)

  • 1 scoop vanilla or white chocolate protein powder

  • 1 cup oat flour (or blended oats)

  • ½ tsp baking powder

  • ½ tsp cinnamon

  • Pinch of salt

  • ¼ cup Greek yoghurt

  • 2 tbsp maple syrup or honey

  • 1 tbsp coconut oil

  • 1 tsp vanilla extract

  • ¼ cup dried cranberries

  • 2 tbsp white chocolate chips


Instructions

  1. Preheat oven to 180°C (160°C fan) and line a baking tray.

  2. In a bowl, mix protein powder, oat flour, baking powder, cinnamon, and salt.

  3. Add yoghurt, maple syrup, coconut oil, and vanilla. Stir until a dough forms.

  4. Fold through cranberries and white chocolate chips.

  5. Scoop dough onto the tray and gently flatten (they won’t spread much).

  6. Bake for 10–12 minutes, until lightly golden on the edges.

  7. Cool slightly — they firm up as they set.
