Cooking with Kimmi - Rocktober Rocky Road Protein Bites

This is Rocky Road, but with a high-protein, Rocktober twist. It’s chewy, crunchy, chocolatey — and packed with the fuel you need to smash your October goals.


Ingredients (makes ~12 bites)

  • 2 scoops Chocolate Whey

  • 1 cup dark chocolate chips (melted)

  • 2 tbsp coconut oil

  • 1 cup mini marshmallows (or sugar-free alternative)

  • ½ cup roasted almonds or peanuts, roughly chopped

  • ½ cup dried cranberries

  • ¼ cup shredded coconut (optional for extra texture)


Instructions

  1. Line a small square pan (20cm) with baking paper.

  2. In a microwave-safe bowl, melt chocolate chips with coconut oil until smooth.

  3. Stir in the protein powder until fully mixed.

  4. Fold in marshmallows, nuts, cranberries, and coconut.

  5. Pour mixture into the pan, pressing down gently to even it out.

  6. Chill in the fridge for at least 1 hour, or until set.

  7. Slice into bite-sized squares and store in an airtight container in the fridge.


Macro-Friendly Tip:

Swap half the chocolate for melted sugar-free choc chips or use a chocolate protein that’s naturally sweetened to keep sugar lower.
