Cooking with Kimmi - Sup'tember Protein Birthday Cake Truffles

Ingredients

  • 1 cup vanilla protein powder

  • 1/2 cup oat flour (or almond flour for GF option)

  • 1/4 cup nut butter (cashew or almond works best)

  • 1/4 cup maple syrup or honey

  • 2–3 tbsp almond milk (add more if needed)

  • 1 tsp vanilla extract

  • Pinch of salt

  • White chocolate chips (for coating)

  • Rainbow sprinkles (for topping)

Method

  1. In a large bowl, mix protein powder, oat flour, and salt.

  2. Add nut butter, maple syrup, and vanilla extract. Stir until it starts to come together.

  3. Slowly add almond milk, a little at a time, until you get a dough that holds its shape.

  4. Roll the dough into small bite-sized balls.

  5. Melt white chocolate chips in a microwave-safe bowl, then dip each ball until coated.

  6. Place on a lined tray, sprinkle with rainbow sprinkles, and chill in the fridge for 30 minutes to set.
