Ingredients

1 cup vanilla protein powder

1/2 cup oat flour (or almond flour for GF option)

1/4 cup nut butter (cashew or almond works best)

1/4 cup maple syrup or honey

2–3 tbsp almond milk (add more if needed)

1 tsp vanilla extract

Pinch of salt

White chocolate chips (for coating)

Rainbow sprinkles (for topping)
Method

In a large bowl, mix protein powder, oat flour, and salt.

Add nut butter, maple syrup, and vanilla extract. Stir until it starts to come together.

Slowly add almond milk, a little at a time, until you get a dough that holds its shape.

Roll the dough into small bite-sized balls.

Melt white chocolate chips in a microwave-safe bowl, then dip each ball until coated.

Place on a lined tray, sprinkle with rainbow sprinkles, and chill in the fridge for 30 minutes to set.
