Cooking with Kimmi – Sticky Protein Chicken Lettuce Cups

Resolution Focus: “I want flavour without the food coma.”

These are light, high-protein, handheld, and feel a bit fancy — but take 15 minutes.

Sweet, savoury, sticky chicken wrapped in crisp lettuce cups.


 Ingredients (Serves 2–3)

  • 400g chicken mince

  • 1 tsp olive oil

  • 2 cloves garlic (minced)

  • 1 tsp grated ginger

  • 2 tbsp soy sauce

  • 1 tbsp honey (or sugar-free maple)

  • 1 tsp rice vinegar or lime juice

  • 1 scoop unflavoured protein powder

  • 1 tbsp water (to mix protein powder)

To serve:

  • 8–10 iceberg or cos lettuce cups

  • Sliced spring onion

  • Sesame seeds

  • Optional: chopped chilli


 Method

  1. Heat oil in a pan over medium heat.

  2. Add garlic + ginger, cook 30 seconds.

  3. Add chicken mince and cook until browned.

  4. Stir in soy sauce, honey, vinegar. Let it bubble until slightly sticky.

  5. Mix protein powder with 1 tbsp water to form a smooth paste.

  6. Stir into the chicken and cook 1–2 more minutes (it thickens the sauce + boosts protein).

  7. Spoon into crisp lettuce cups and top with spring onion + sesame.

  • Protein: ~40–45g

  • Lower carb

  • High satiety
