Cooking with Kimmi – Sticky Protein Chicken Lettuce Cups

These are light, high-protein, handheld, and feel a bit fancy — but take 15 minutes.
Sweet, savoury, sticky chicken wrapped in crisp lettuce cups.
Ingredients (Serves 2–3)

400g chicken mince

1 tsp olive oil

2 cloves garlic (minced)

1 tsp grated ginger
-
2 tbsp soy sauce
-
1 tbsp honey (or sugar-free maple)
-
1 tsp rice vinegar or lime juice

1 scoop unflavoured protein powder
-
1 tbsp water (to mix protein powder)
To serve:

8–10 iceberg or cos lettuce cups

Sliced spring onion
-
Sesame seeds
-
Optional: chopped chilli
Method

Heat oil in a pan over medium heat.

Add garlic + ginger, cook 30 seconds.

Add chicken mince and cook until browned.

Stir in soy sauce, honey, vinegar. Let it bubble until slightly sticky.

Mix protein powder with 1 tbsp water to form a smooth paste.

Stir into the chicken and cook 1–2 more minutes (it thickens the sauce + boosts protein).

Spoon into crisp lettuce cups and top with spring onion + sesame.
