Cooking with Kimmi - Sup'tember edition : Birthday Cake Protein Bites

Ingredients:

  • 1 cup oat flour (or finely blended oats)

  • 1 scoop vanilla whey or plant protein powder

  • 2 tbsp coconut flour (for texture)

  • 2 tbsp almond butter (or cashew butter for a cake-like flavor)

  • 2 tbsp maple syrup or honey

  • 2–3 tbsp milk of choice (adjust for texture)

  • 1 tsp vanilla extract

  • 1 tbsp rainbow sprinkles (plus extra for rolling)

Directions:

  1. In a large bowl, mix oat flour, protein powder, and coconut flour.

  2. Stir in almond butter, maple syrup, vanilla, and milk until a dough forms.

  3. Fold in sprinkles (because it’s not a birthday without them).

  4. Roll into bite-sized balls. If you’re feeling extra festive, roll them in more sprinkles.

  5. Chill in the fridge for 20 minutes before serving.
