These rich, chocolatey lava cakes are packed with protein and have a molten, gooey center. Perfect for a romantic dessert that fuels your gains!
Ingredients (Serves 2)
For the cakes:
- 1 scoop Beyond Yourself chocolate protein powder
- 2 tbsp cocoa powder
- 2 tbsp almond flour (or oat flour)
- ½ tsp baking powder
- 1 tbsp honey or maple syrup
- 1 tbsp coconut oil
- ¼ cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 large egg
For the lava center:
- 1 tbsp dark chocolate chips (or a square of dark chocolate)
- ½ tsp coconut oil
Instructions
1️⃣ Preheat oven to 350°F (175°C) and grease two small ramekins.
2️⃣ Melt the lava center: In a small bowl, melt the dark chocolate chips with coconut oil (microwave for 20-30 sec, stirring halfway). Set aside.
3️⃣ Make the batter: In a mixing bowl, whisk together the protein powder, cocoa powder, almond flour, and baking powder.
4️⃣ Add the egg, almond milk, honey, melted coconut oil, and vanilla extract. Stir until smooth.
5️⃣ Fill the ramekins: Pour half the batter into each ramekin. Drop a teaspoon of the melted chocolate in the center, then cover with the remaining batter.
6️⃣ Bake for 8-10 minutes. The edges should be set, but the center should be slightly jiggly.
7️⃣ Cool for 2 minutes, then run a knife around the edges and invert onto a plate.
8️⃣ Garnish with fresh strawberries, a dusting of cocoa powder, or a drizzle of melted chocolate.
